Lemon Roasted PotatoesRecipes / By Natalie Serving Size:6-8 people Time:1 hour 15 mins Difficulty:Easy Ingredients 1kg potatoes 2 fresh lemons, juiced 3 tbsp olive oil 700ml stock 1 tbsp dried oregano salt and pepper to taste Directions Heat the oven to 200°C Peel and cut the potatoes in half. Place in a roasting tin, and drizzle with olive oil and lemon juice. Pour over the stock combined with oregano, salt and pepper. Cook until all the water has been absorbed and turned golden brown, for approx. 45 – 60 minutes
