Lemon Roasted Potatoes

Ingredients

  • 1kg potatoes
  • 2 fresh lemons, juiced
  • 3 tbsp olive oil
  • 700ml stock
  • 1 tbsp dried oregano
  • salt and pepper to taste

Directions

  • Heat the oven to 200°C
  • Peel and cut the potatoes in half.
  • Place in a roasting tin, and drizzle with olive oil and lemon juice.
  • Pour over the stock combined with oregano, salt and pepper.
  • Cook until all the water has been absorbed and turned golden brown, for approx. 45 – 60 minutes
