Hoisin chicken and noodles

Ingredients

  • 500g chicken breast, cut into large chunks 
  • 2 garlic cloves, crushed
  • 2 spring onions, shredded
  • 2 tbsp hoisin sauce
  • 4 nests of noodles
  • 1 cup broccoli
  • 1 cup capsicum, roughly chopped
  • 2 tbsp olive oil
  • black pepper

 

directions

  • Cook noodles in a saucepan of boiling water (follow the packet instructions).
  • In a large saucepan, heat the oil on high.
  • Stir fry broccoli and capsicum for 3 minutes, or until tender. Set aside.
  • Add chicken and garlic to the pan and cook for 6 minutes or until the chicken is cooked through.
  • Return the vegetables to the pan and stir in the sauce.
  • Stir for 2-3 minutes, ensuring the vegetables and chicken are well coated.
  • Serve noodles onto plates and top with stir fry.
  • Season with pepper and garnish with spring onion.
